MAKING YOUR PIZZA

Dough may be stored in the freezer for up to 60 days. or refrigerated and used within 24 hours. When you're ready to use your dough, remove from packaging and place on a floured surface in a warm spot of your home. Sprinkle dough lightly with flour, and cover with a clean towel. Leave dough to sit until it reaches ~65° (room temp). Note: If starting from FROZEN, this will take 3-4 hours. This step is crucial to the fermentation process!

Conventional Oven Cooking Instructions:

If using an outdoor pizza oven, follow manufacturers instructions.

- Preheat to 550° (or highest oven temp) for at least 1 hour. We highly recommend using a pizza stone. Keep pizza stone in oven while preheating. 

- Knead your fully thawed dough on a lightly floured surface, then spread or roll out to ~12" round. Assemble toppings on pizza.

- Once oven has been preheated for at least 1 hour, coat your pizza peel with a few tablespoons of flour. Place assembled pizza on your peel, and slide it onto the preheated pizza stone.

*Tip: Don't be afraid to use more flour when handling dough!

- Cook for 10-12 minutes, rotating pizza every couple of minutes until crust is evenly cooked. *Note: Less time and more frequent rotations needed if cooking in outdoor pizza oven!
